Rustic Sour Ale - Oak Barrel Aged

This Belgian inspired Sour Beer is a blend of two mixed ferment beers, a 12-month Chardonnay barrel–aged ale and a 24-month bourbon barrel–aged ale.

After blending, the sour ale was pitched with Brettanomyces yeast and bottle conditioned for four months, adding layers of complexity and funk to the barrel character and balanced sourness.

The finished beer is beautifully complex. Notes from the Chardonnay barrels are clearly present but never overwhelming. Malt character provides balance and length, leading to a moreish, satisfying finish.
